Dom Perignon is couture in a glass, always more than the sum of its parts, a champagne based not on a recipe, but only on the alchemical arts of its maker. It took Dom Pierre Perignon, Cellar Master at the Abbey of Hautvillers, the man recognised as the creator of the champagne we know and love today, 47 years of humility, education and hard work to create his "ideal" wine during which he pioneered many of the methods that became the way in which champagne continues to be crafted to this day. Dom Perignon is unique in the Champagne world. It is only ever a vintage (made from the grapes of a single years harvest) with a minimum of 7 years of ageing. If the Grand Cru grapes are not up to its high standards, a vintage is not declared.

Colour: Deep, with light amber and copper tintsNose: Incites a burst of richness and complexity. Ripe fruit at first, then fig and strawberry as the wine breathes and grows, revealing guava, violet and vanillaPalate: Concentrated and remarkably well-defined. The fullness is structured, rich. The silky, spicy material very gradually disappears into a mineral, iodine, salty finish.
